Spinach and Tofu Stir Fry

Got 20 minutes? Spinach and Tofu Stir Fry makes the absolute quickest, most delicious vegan dinner that takes hardly any effort at all. Made with fresh greens and seasoned well with onion, garlic, and ginger. You're sure to fall in love.

Ingredients

  • 1 tbsp vegetable oil
  • ½ lb. extra firm tofu diced
  • 1 small onion finely diced
  • 2 minced garlic cloves
  • 1 tsp minced fresh ginger
  • 3 tbsp soy sauce
  • 12 oz. baby spinach
  • Black pepper
  • 1 tsp sesame seeds for garnish

Instructions

  • Heat the oil in a medium skillet over medium-high heat.
  • Add the tofu once the oil is hot and stir fry for 5 minutes or until golden brown.
  • Add the onion, garlic, and ginger.
  • Continue to cook while stirring for 1 minute.
  • Pour in the soy sauce followed by the spinach and a generous pinch of black pepper.
  • Stir fry for about a minute or until the spinach wilts.
  • Garnish with the sesame seeds then serve.
